The start of summer means the start of so many wonderful things! Beach days, BBQ nights, days that are 90˚ but you can’t complain because you were freezing from October-April. Now that the humidity is here and all you want to do is sit in front of your fan all day, I have a couple of recipes that are sure to cool you down!
To me, popsicles trump all other refreshing summer desserts. As a child at the beginning of each summer, we would always get one of those huge packs of freeze-pops, knowing that they would be our go-to after spending a few too many hours at the beach.
Weird confession: my favorite part would be the juice that would be left over once you finished eating the pop.
Now that it has been around 85˚-95˚ each day in wonderful West Virginia, I decided to bring popsicles back for the next few months! What is so wonderful about these? Not only are they made from fresh fruit and juice, but they can easily be changed and adapted depending on your tastes and cravings!
The spicy ginger-pineapple popsicle is so refreshing and the combination will not only instantly cool you down, but bring you to your own little tropical paradise. Craving something more traditional? Blend up your favorite berries, add some seltzer to give this treat a little pop, and you’ll be feeling like it’s only 75˚!
Ginger-Pineapple Popsicle
ingredients
Pineapple (diced)—¾ C
Lime Zest—all from 1 medium
Lime Juice—about 2 TBL
Ginger (peeled and sliced)—2” piece
Ginger Beer—½ C
Mixed Berry Popsicle
ingredients
Strawberries—½ C
Blackberries—¼ C
Raspberries—¼ C
Orange Juice—½ C
Seltzer Water—¼ C
process
Blend all of your ingredients together.
Pour into molds.
Freeze and enjoy!
